Portobello Chicken
This is one of mine and my hubby's FAVORITE meals of all time! It is fairly simple, takes about half an hour and is super tasty!!! Enjoy!
Heat oven to 400F
Combine 1/4 c seasoned bread crumbs (we love panko crumbs seasoned with italian seasoning) and 1/3 c grated parmesan cheese in a shallow bowl. Then take two or three (depending on the size) fresh boneless skinless chicken breasts (I like to pound mine a bit with a meat cleaver between two pieces of saran wrap to avoid messes) and dredge them in the bread crumb mixture.
Place in oven safe dish that has been sprayed with cooking spray (I like the olive oil stuff) and put in oven- let cook while preparing the topping.
Next in a large frying pan pour 2-3 T olive oil (enough to cover the bottom of the pan) and heat over medium-high heat
Slice the shallot (or you can use 1/3 of a regular onion or 1/3 of a red onion- we used a red onion in this case, it is cheaper, but shallots are yummy!) and add to the heated oil
Now slice up the mushrooms, you can either use two portobello mushroom caps or (as we did) use baby bellas
Add the mushrooms, 1 T chopped parsley (you can use dried- I did...), and 1/4 t pepper to the onions and saute for about 5 minutes, turning the mushrooms at least once during that time:
Pull the partially cooked chicken out of the oven and pour the mushroom mixture on top.
Then top with slices of Mozzarella cheese
Cook an additional 20 minutes or until chicken is done. Should look like this:

Ingredients
2-3 boneless skinless chicken
-breast halves
1/4 c seasoned bread crumbs
1/3 c grated Parmesan cheese
1 sm shallot; chopped (or 1/3 onion red or yellow)
2 Tb olive oil
2 portobello mushrooms; sliced
1 Tb chopped parsley
1/4 t pepper
4-8 (depending on how big) slices mozzarella cheese(or grated)
Instructions
Combine bread crumbs and Parmesan cheese in a shallow bowl. Press
mixture onto both sides of chicken. Spray oven-proof casserole with
nonstick cooking spray and arrange chicken in a single layer.
Put in 400 oven while making the topping.
In small skillet, place olive oil over medium-high heat.
Add shallot and saute until soft. Add mushrooms, parsley and pepper;
cook about 5 minutes, turning mushrooms once. Top each piece with
mushroom mixture. Place a slice of mozzarella cheese on top of each.
Bake at 400F for additional 20 minutes.
